Makes 16
Ingredients
- 4oz (110g) self-raising flour
- 1 slightly rounded tsp ground ginger
- 1 tsp bicarbonate of soda
- 1½ oz (40g) granulated sugar
- 2oz (50g) margarine
- 2 tbsp golden syrup
Directions
- Preheat oven to 190°C/375°F/Gas Mark 5
- Grease large baking sheet
- Sift flour, ginger and bicarbonate into bowl. Add sugar and lightly rub in margarine until mixture is crumbly
- Add syrup and mix to form a firm paste
- Divide into 16 equal balls
- Place on the baking sheet, leaving plenty of space to allow for spreading. Flatten each ball slightly
- Bake for 10-15 minutes
- Cool on sheets for 10 minutes, then cool on a wire rack
- Store in an airtight container
