This recipe is one of my favourites and always goes down a storm when it's my
turn for cakes at research seminars at University! The recipe uses plain, milk
and white chocolate chips for extra taste and colour.
Makes 18 cookies.
Ingredients
- 175g (6oz) plain flour
- 1/2tsp baking powder
- Pinch of salt
- 120g (4oz) softened butter
- 120g (4oz) light brown soft sugar
- 1/2tbsp honey
- 1 egg
- 1tsp vanilla essence
- 120g (4oz) plain chocolate chips
- 50g (2oz) milk chocolate chips
- 50g (2oz) white chocolate chips
Directions
- Heat oven to 160°C/355°F/Gas Mark 3.
- Grease 2 baking sheets.
- Sift together the flour, salt and baking powder.
- Beat the butter and sugar together until creamy.
- Beat the egg, honey and vanilla essence into the butter and sugar mix.
- Stir the flour mix into the rest of the ingredients.
- Gradually stir in the chocolate chips - use more if you want your cookies chocolatier!
- Place the dough on the baking sheets in 18 equally-sized lumps. Make sure a gap of about 5cm (2in) is left between the cookies else they will spread into each other.
- Bake for around 20 minutes.
- Allow to cool on a wire rack before transferring them into an airtight container for storage.
